Regarding off grid living.
Have you considered a class B rv or small class C rv?
You could add solar for electricity, you would have a freshwater tank for drinking and cooking, and shelter on wheels.
There was a great documentary on the topic called “Without Bounds”, though admittedly it is skewed a bit to people that are living this way full-time and in a semi-nomadic fashion.

PS: there is free dispersed camping available in the National Forest lands that are about 70 miles West of Greely.
