I’ve begun keeping track of my food at https://www.supertracker.usda.gov/ which emphasizes the plate with the food groups. I was talking to some folks at a display on the topic and the idea of keeping track by food groups rather than calories appealed to me. The nice thing is that this site gives me the calorie total, too, but I find I’m doing a lot better with getting all of the groups where previously I’d been very heavy on the grains. Your mention of peanuts was something that recently came to me, too. I’m vegan and I was low on the protein, but I’ve thrown in 1 or 2 servings of unsalted roasted peanuts each day and cut back on a grain. I also threw in an additional soymilk to up the dairy. Main point is that those peanuts should be easy to find. I got Planters. I’m going to get some toasted unsalted soynuts, too. The peanuts are a treat and good for me without huge calories. Peanut butter is tougher for me to control and has added sugar and/or oil. So, bottom line is that I toast your peanut idea.

You should used walking shoes that permit you ankle to work, ask a foot doctor about the need for the ankle to work.
